1. Trim fat from boneless brisket. Cut meat to fit into 3 ½ - to 6-quart slow cooker if necessary.
2. In the cooker, combine onion and bay leaf then add meat.
3. Combine beer, chili sauce, brown sugar, garlic, thyme, garlic salt, salt and pepper in a medium bowl and pour over meat.
4. On a low-heat setting, cover and cook for 10-12 hours or 5-6 hours on a high-heat setting.
5. Using a slotted spoon, transfer meat and onion to a serving platter. Slice meat across the grain; cover and keep warm. Discard bay leaf.
6. To prepare the gravy, pour enough 2 ½ cups of the cooking liquid into a 4 cup measuring cup skimming off the fat. Discard the remaining cooking liquid.
7. In a medium saucepan, combine cornstarch and cold water. Gently stir in 2 ½ cups cooking liquid.
8. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more.
9. Serve meat and onions with gravy.
