1. Remove bottom and outer leaves of cauliflower; clean and cut cauliflower into small pieces.
2. Bring stock to a boil. Add cauliflower and boil for 7 minutes, or until tender. Drain well; reserve ½ cup of liquid.
3. In a bowl with an immersion blender, or in a food processor, puree the cooked cauliflower, garlic, parmesan and half n’ half until smooth. Use reserved cooking stock to create desired consistency. Add salt and pepper to taste; serve immediately.
