1. Place ground beef in large skillet and brown over medium heat. Add onion, garlic, celery and carrot and cook, stirring occasionally until onion is translucent. Drain excess drippings.
2. Add tomatoes, salt, and pepper. Reduce heat, cover and simmer for 30 minutes, stirring occasionally.
3. Cook macaroni according to package directions and drain well.
4. Combine meat mixture, macaroni and spinach and mix well. Pour into 9x13-inch baking dish. Cover with foil and bake at 350 for 20 minutes. Uncover and sprinkle with cheese. Bake an additional 5 minutes.
