1. In a large pot, heat oil over medium heat. Add onion, jalapeno and garlic; sauté 2 minutes stirring constantly to prevent burning.2. Add carrots, chicken broth, tomatoes and seasonings. Bring to a boil, then reduce heat to medium cooking to reduce liquid by one-third. Add chicken and cook another 5 minutes.
3. To serve, divide evenly into 4 bowls; top with cilantro, tortilla chips and cheese.
