  1. Preheat oven to 400 degrees F. Spray a muffin tin with non-stick spray and line with parchment paper if desired. Set aside.

  2. Cut the puff pastry sheets into 5” squares. Set aside in refrigerator.

  3. Melt butter over medium heat in a saucepan. Add flour and salt. Cook for 1 minute, stirring frequently.

  4. Slowly pour in the milk, while whisking constantly until smooth and boiling. Redeuce heat to low and allow mixture to simmer, stirring occasionally, until it begins to thicken.

  5. Add in spinach and cook for 1 minute or until wilted.

  6. Add ham and 1 cup of Swiss cheese and stir to combine. Remove from heat and set the mixture aside.

  7. Arrange the puff pastry squares in the muffin tin cavities. Fill each with a spoonful of ham and cheese mixture. Sprinkle with grated cheese. Fold the corners up onto the top of each.

  8. Brush the pastry with the egg wash, making sure to coat all sides. 

  9. Bake for 18-20 minutes or until puffed and golden.
