In a small bowl mix Dijon, Red Wine, Minced Onions, Garlic, Rosemary, Pepper, & Salt together blend thoroughly. Place the roast in an oven proof pan and run the roast over the entire surface with the blended mixture. Place in a 325°F oven and cook for 1 ½-2 hours until desired temperature is reached. Let it rest 15 minutes prior to cutting.
