Preparation
1. To prepare cake, in large bowl, mix together cake mix, eggs, oil, and mandarin oranges with juice.
2. Pour batter evenly into 3 cake pans that have been lightly greased and lined with wax paper. Bake at 350 degrees for about 30 minutes or until golden brown and toothpick inserted into center of cake comes out clean. Allow cakes to cool in pan for about 10 minutes. Turn cakes onto wire rack, carefully remove wax paper liner, and allow to cool completely before frosting,
3. To prepare frosting, whisk together pineapple with juice, dry instant pudding, and vanilla. Fold in whipped topping.
4. Spread frosting between layers and stack carefully. Ice layer cake with remaining frosting and place cake in refrigerator.
