Finely shredded green cabbage

1 (15.25 oz. can) peach slices, drained & chopped

1/4 cup diced red onion

1 tablespoon fresh-squeezed lime juice

8 corn or flour tortillas, slightly warmed

Shredded Monterey Jack Cheese *optional
